  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
Liquid Ingredients
  • 4 cups vegetable or chicken broth Use vegetable broth for a vegan version.
  • 1 can (14 oz) diced tomatoes
Vegetables
  • 1 cup frozen peas
  • 1 cup green beans, chopped
Seasonings
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot or slow cooker, heat the olive oil over medium heat.
  2. Add the onion, carrots, celery, and garlic. Sauté until the vegetables are tender.
Cooking
  1. Pour in the broth, and add the diced tomatoes, peas, green beans, thyme, salt, and pepper.
  2. If using a slow cooker, cover and cook on low for 6-8 hours or on high for 3-4 hours.
  3. If using a pot, bring to a boil, then reduce heat and simmer for about 30 minutes.
Serving

Notes

For an enhanced flavor, consider adding fresh herbs like basil or parsley. For a creamier version, stir in a splash of cream or sour cream. This soup can be made vegan with vegetable broth and no meat, and feel free to add any seasonal vegetables you like.
