For the Salad
  • 5 cups Mixed greens (spinach, arugula, or lettuce) Any combination of mixed greens works well.
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.5 small Red onion, thinly sliced Adjust amount to taste.
  • 0.5 cup Pomegranate seeds
  • 0.5 cup Feta cheese, crumbled Omit for a vegan version.
  • 0.5 cup Walnuts or pecans, toasted Freshly toasted nuts add extra flavor.
For the Dressing
  • 3 tbsp Honey Use maple syrup for a vegan option.
  • 2 tbsp Dijon mustard
  • 3 tbsp Olive oil Adjust amount for desired richness.
  • to taste Salt and pepper Add to taste.

Method
 

Preparation
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, pomegranate seeds, feta cheese, and toasted nuts.
Dressing
  1. In a small bowl, whisk together honey, Dijon mustard, olive oil, and a pinch of salt and pepper.
Assembly
  1. Drizzle the dressing over the salad and toss gently to combine.
  2. Serve immediately as a festive side dish.

Notes

Store any leftovers in the fridge for up to 2-3 days. Keep dressing separate until ready to serve to avoid soggy greens.
