Method
 

Preparation
  1. In a blender, puree the watermelon cubes until smooth.
  2. Strain the watermelon juice into a pitcher if you prefer a smoother texture.
  3. In a glass, muddle the fresh mint leaves with lime juice and honey/agave (if using) to release the mint's flavor.
  4. Fill the glass with ice cubes, then pour in the watermelon juice.
  5. Top off with sparkling water and stir gently.
  6. Garnish with additional mint leaves and a slice of watermelon if desired.
  7. Serve immediately and enjoy your tropical drink!

Notes

This mocktail is best enjoyed fresh. If you have leftovers, store in the fridge for 1-2 days. For an exciting twist, try adding coconut water or berries. Make a big batch by multiplying the ingredients, keeping sparkling water separate until serving.
