  • 1 cup sunflower seeds (raw)
  • 1/4 cup sesame seeds
  • 1 cup pitted dates (roughly chopped) Use fresh for better sweetness
  • 1/2 cup hemp seeds (optional) Can substitute with flax meal or chopped almonds
  • 1/2 cup tahini or sunflower butter Tahini adds unique flavor
  • 1/4 cup honey Can be replaced with maple syrup for vegan option
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt (to taste)
  • 3/4 cup chocolate chips (semi-sweet) For optional topping
  • 1 tablespoon ghee, butter, or coconut oil For melting with chocolate

Method
 

Preparation
  1. Toast sunflower and sesame seeds in a skillet for enhanced flavor and crispiness.
  2. In a food processor, blend the toasted seeds with chopped dates, hemp seeds, tahini (or sunflower butter), honey, and spices until well mixed.
  3. Spread the mixture into a baking dish lined with parchment paper, pressing down firmly.
  4. Refrigerate until set, then cut into squares.
  5. For an optional chocolate topping, melt chocolate chips with ghee, butter, or coconut oil and drizzle over the bars.

Notes

Store bars in an airtight container in the refrigerator for up to a week or freeze for longer storage. Press firmly when shaping to avoid crumbly bars.
