Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together the butter, granulated sugar, and powdered sugar until fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture and mix until combined.
  5. Roll the dough into small balls and place them on the prepared baking sheets, flattening them slightly.
Baking
  1. Bake for 10-12 minutes, or until set. Allow cookies to cool completely.
Assembly
  1. Once cooled, spread jam or frosting on the flat side of one cookie and sandwich it with another cookie.
  2. Decorate the cookies with sprinkles or icing as desired.

Notes

Chill your dough for about 30 minutes before rolling to make it easier to handle. Consider using different flavored jams or frostings for a twist.
