Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs Room temperature
  • 1 cup whole milk Room temperature
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water This makes the cake moist
For the Frosting
  • 1 cup butter, softened Room temperature
  • 4 cups powdered sugar
  • 0.5 cups heavy cream
  • 1 teaspoon vanilla extract For the frosting
  • Red food coloring For coloring the frosting
  • Sprinkles or decorations for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together.
  4. Add the eggs, milk, oil, and vanilla to the dry mix, and mix until combined.
  5. Slowly stir in the boiling water until the batter is smooth.
  6. Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  7. Once done, let the cakes cool in the pans for 10 minutes. Transfer to wire racks to cool completely.
Frosting
  1. For the frosting, beat the softened butter until creamy. Gradually mix in the powdered sugar and heavy cream.
  2. Add another teaspoon of vanilla and mix until smooth. Color the frosting with red food coloring.
  3. Once the cakes are cool, frost one layer, stack the second layer on top, and finish frosting the top and sides.
  4. Decorate with sprinkles or other decorations.

Notes

Let the cakes cool completely before frosting to avoid melting. You can store the cake covered in the fridge for about 3-4 days or freeze for up to 3 months. Room temperature ingredients work best for moisture.
