Ingredients
  

Chocolate Cookie Dough
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional) Enhances chocolate flavor
Pink Cookie Dough
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2-3 teaspoons freeze-dried raspberry powder or pink food coloring For color
Ganache Filling
  • ½ cup heavy cream
  • ¾ cup dark or white chocolate chips, finely chopped
  • 1 tablespoon butter (optional)
Optional Toppings
  • Freeze-dried raspberries
  • Chocolate squares
  • Heart sprinkles
  • Melted white chocolate for drizzling

Method
 

Prepare the Dough
  1. Cream together the butter and sugars in separate bowls until fluffy.
  2. Add the egg and vanilla extract, mixing well before stirring in the dry ingredients for each dough.
  3. Chill both doughs in the refrigerator for about 30 minutes.
Bake the Cookies
  1. Scoop the dough into balls and press a well in the center of each ball.
  2. Bake at 350°F (175°C) for 10–12 minutes.
  3. After baking, re-press the centers while the cookies are still warm. Let them cool completely.
Prepare the Ganache
  1. For the ganache, pour hot cream over the chocolate, stirring until smooth.
  2. Fill the cooled cookie centers with ganache and decorate as desired.
  3. Let the cookies set at room temperature or chill briefly before serving.

Notes

These cookies hold their charm well! Store them in an airtight container at room temperature for up to one week. If you want to extend their life, freeze them for about three months.
