  • 1 cup shredded Jack cheese
  • 2 tablespoons olive oil
  • 2-3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rub olive oil over the chicken breasts and season with salt and pepper.
  3. In a skillet over medium-high heat, sear the chicken until golden brown on both sides (about 5 minutes per side).
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and let it simmer, scraping the bottom of the pan.
  6. Stir in the sour cream until fully combined and let it bubble for about 5 minutes.
  7. Top each chicken breast with shredded Jack cheese.
  8. Transfer to the oven and bake for around 15 minutes or until the cheese is melted and bubbly.
  9. Garnish with chopped green onions and paprika before serving.

Notes

Storage: Keeps well in the fridge for 3-4 days in an airtight container. Can freeze for up to 3 months. Pro Tip: Toasting garlic enhances flavor.
