  • 2 cups corn (fresh, frozen, or canned) If using frozen corn, heat it in the microwave before mixing.
  • 1 red bell pepper, diced
  • 1 avocado, diced Add gently to keep chunks intact.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 cup cooked quinoa or rice Feel free to switch with brown rice or cauliflower rice.
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced Adds a fresh zing to the bowl.
  • to taste Salt and pepper Adjust according to preference.

Preparation
  1. In a large bowl, combine the cooked chicken, corn, red bell pepper, avocado, cherry tomatoes, and red onion.
  2. Add the cooked quinoa or rice to the mixture and stir gently.
  3. Squeeze lime juice over the bowl, then add cilantro, mixing well.
  4. Season with salt and pepper to taste.
  5. Serve immediately, or refrigerate for meal prep.
  6. Optional: Top with cheese, sour cream, or hot sauce before serving.

Notes

This dish can be prepared ahead of time and stored in the fridge for 3-4 days or frozen for up to 3 months. Reheat in the microwave or on the stove until warm.
