Ingredients
  

Nuts & Seeds
  • 16 oz raw cashews
  • 1/4 cup toasted sesame seeds
Sweeteners & Fats
  • 1/2 cup coconut sugar
  • 2 tablespoons unsalted butter Can be replaced with coconut oil for vegan option.
  • 2 tablespoons honey Can substitute with agave nectar or maple syrup.
Seasoning
  • 1/2 – 1 teaspoon salt Add less if you prefer less salt.

Method
 

Preparation
  1. Preheat the oven to 300°F (about 150°C).
  2. Spread the cashews on a lined baking sheet.
Roasting
  1. Roast the cashews for 15 – 20 minutes until they are fragrant and golden.
Caramel Mixture
  1. In a pot over low heat, combine coconut sugar, unsalted butter, and honey.
  2. Whisk until it reaches a gooey caramel-like consistency (about 5 minutes).
Mixing & Coating
  1. In a large bowl, combine roasted cashews with toasted sesame seeds.
  2. Pour the caramel over the cashew and sesame mix, then stir until everything is well coated.
Finishing Touch
  1. Spread the coated cashews back on a baking sheet and sprinkle with flaky salt.
  2. Allow to cool completely before breaking into clusters.

Notes

Store in an airtight container at room temperature for up to two weeks. Monitor roasting time as ovens vary.
