Preparation
- Preheat the oven to 300°F (about 150°C).
- Spread the cashews on a lined baking sheet.
Roasting
- Roast the cashews for 15 – 20 minutes until they are fragrant and golden.
Caramel Mixture
- In a pot over low heat, combine coconut sugar, unsalted butter, and honey.
- Whisk until it reaches a gooey caramel-like consistency (about 5 minutes).
Mixing & Coating
- In a large bowl, combine roasted cashews with toasted sesame seeds.
- Pour the caramel over the cashew and sesame mix, then stir until everything is well coated.
Finishing Touch
- Spread the coated cashews back on a baking sheet and sprinkle with flaky salt.
- Allow to cool completely before breaking into clusters.
Notes
Store in an airtight container at room temperature for up to two weeks. Monitor roasting time as ovens vary.
