Method
 

Preparation
  1. Cook jasmine rice according to package instructions.
  2. In a pan over medium heat, cook diced chicken until browned and cooked through.
  3. Add sweet chili sauce to the chicken and stir until well coated.
Drizzle Preparation
  1. In a separate bowl, mix coconut milk, lime juice, salt, and pepper to create the drizzle.
Assembly
  1. Assemble the bowl by placing rice at the bottom, topping with chicken, mixed vegetables, and drizzling the coconut lime sauce on top.
  2. Garnish with fresh cilantro and serve!

Notes

Store leftovers in the fridge for up to 3 days and reheat when ready. For best results, keep the drizzle separate. Can be frozen for up to 2-3 months, but store without drizzle.
