Preparation
- Preheat the oven to 350°F (175°C) and grease and flour a 9x5-inch loaf pan.
- In a bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
- In another bowl, whisk together melted butter, granulated sugar, brown sugar, and eggs until smooth. Then stir in the apple cider and vanilla.
- Gently fold the dry ingredients into the wet mixture just until combined.
Baking
- Pour the batter into the prepared loaf pan and bake for about 45–50 minutes or until a toothpick comes out clean.
- Let it cool slightly.
Topping
- Mix together cinnamon and sugar for the topping.
- Brush melted butter on top of the loaf before generously sprinkling the cinnamon sugar mixture.
- Slice and enjoy warm or at room temperature.
Notes
Store in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator. Avoid overmixing to ensure a fluffy loaf. Consider adding nuts or dried fruit for extra texture.
