Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, and salt together.
  3. Add the softened butter and vanilla, mixing until creamy.
  4. Beat in the egg until fully incorporated.
  5. Chill the dough in the refrigerator for about 30 minutes.
Baking
  1. Roll out the dough on a lightly floured surface and cut out shapes, ensuring half have an opening cut out for the jam.
  2. Bake for 10-12 minutes until the edges are golden.
  3. Cool before spreading jam on the bases and topping with the cut-out cookies.
  4. Dust with powdered sugar before serving.
