Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract.
  4. Gradually add in the flour, chopped nuts, and salt, mixing until well combined.
  5. Roll the dough into small balls (about 1 inch in diameter) and place them on ungreased cookie sheets.
Baking
  1. Bake for 10-12 minutes, or until the bottoms are lightly golden.
  2. Allow cookies to cool slightly, then roll in powdered sugar while still warm.
  3. Let them cool completely and roll in powdered sugar again before serving.

Notes

For a more intense flavor, try different extracts like almond or hazelnut. These cookies can be made ahead of time by refrigerating the dough.
