Preparation
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Place the chicken breasts in the prepared baking dish in a single layer.
Mixing
- In a mixing bowl, combine 1 cup sour cream, 1/2 cup Parmesan cheese, 1 tablespoon cornstarch, 1 teaspoon oregano, 1 teaspoon garlic powder, and salt and pepper to taste. Stir until smooth.
Assembly
- Place one slice of mozzarella cheese on top of each chicken breast.
- Spread the sour cream mixture evenly over each chicken breast and sprinkle the remaining Parmesan cheese on top.
Cooking
- Bake in the preheated oven for about 60 minutes or until chicken reaches an internal temperature of 165°F (74°C) and the cheese is golden and bubbly.
- Allow the dish to stand for a few minutes before serving.
Notes
Pound your chicken before baking for even cooking. Use Greek yogurt for a tangy twist or to reduce fat. Add spinach or mushrooms for more flavor. This dish keeps well in the fridge for about 3–4 days. Can be frozen for up to 3 months — thaw and bake when ready.
