- In a slow cooker, combine chicken breasts, lemon juice, lemon zest, olive oil, thyme, rosemary, garlic, chicken broth, salt, and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is fully cooked.
- Remove the chicken and shred it. Return the shredded chicken to the slow cooker and mix with the delicious sauce.
- Serve the chicken over fluffy rice and garnish with fresh parsley.
Notes
If you have extra time, cook on low for better flavor infusion. Swap chicken for tofu or chickpeas for a vegan version. You can add veggies like zucchini or bell peppers for added nutrition.
