  • 2 cups diced potatoes
  • 1 cup diced ham Use leftover ham if available
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 cups chicken broth
  • 1 cup heavy cream Add at the end for creaminess
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Method
 

Cooking
  1. In a slow cooker, combine the diced potatoes, ham, onion, carrots, chicken broth, garlic powder, salt, and pepper.
  2. Cover and cook on low for 6-8 hours or high for 4 hours until the vegetables are tender.
  3. Stir in the heavy cream, and cook for an additional 30 minutes.
  4. Serve hot, garnished with chopped green onions if desired.

Notes

For best results, let the soup simmer for a while to allow the flavors to meld together. It can be served with warm crusty bread or topped with crispy bacon bits.
