Ingredients
  

Seed Mixture
  • cup chia seeds Keeps everything together when soaked.
  • cup whole flax seeds Adds healthy fats and fiber.
  • 1 cup boiling water Used to soak chia and flax seeds.
  • ½ cup sunflower seeds For crunch and flavor.
  • ½ cup pumpkin seeds Adds texture and nutrients.
  • 4 tbsp sesame seeds Enhances flavor diversity.
  • 1 tsp sea salt
  • Black pepper To taste.
  • 1 tsp dried rosemary Provides a flavorful herbaceous note.
  • 1 tbsp olive oil For richness.

Method
 

Preparation
  1. In a large bowl, mix the chia seeds, flax seeds, and boiling water. Stir and let sit for about 10 minutes to thicken.
  2. Preheat the oven to 180C (160C fan) or 350F.
  3. Add the sunflower seeds, pumpkin seeds, sesame seeds, sea salt, black pepper, dried rosemary, and olive oil to the thickened mixture. Mix thoroughly.
Baking
  1. Press the mixture into a large lined baking tray, measuring 24x34 cm, and score it into 24 small squares.
  2. Bake in the oven for about 50 minutes, then allow to cool on a rack until hard before breaking into scored squares.

Notes

Store in an airtight container for up to two weeks. Allow crackers to cool completely before storing to prevent moisture.
