  • 2 cups almond flour Main ingredient providing a gluten-free base.
  • 1 teaspoon baking powder For leavening.
  • 1 teaspoon salt To enhance flavor.
  • 1 tablespoon dried herbs (e.g., oregano, thyme, or rosemary) Adds flavor.
  • 1/4 teaspoon garlic powder Optional for extra flavor.
  • 1/4 teaspoon onion powder Optional for extra flavor.
Wet Ingredients
  • 3 large eggs Provide moisture and richness.
  • 1/4 cup olive oil For moisture and flavor.
  • 1/4 cup shredded cheese Optional but recommended for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, whisk together almond flour, baking powder, salt, dried herbs, garlic powder, and onion powder.
  3. In another bowl, beat the eggs and then add olive oil. Mix well.
  4. Gradually pour the wet mixture into the dry ingredients and stir until a dough forms. If using, fold in the shredded cheese.
  5. Pour the dough into the prepared loaf pan and smooth the top.
Baking
  1. Bake in the preheated oven for 30-40 minutes, or until golden brown and a toothpick inserted comes out clean.
Cooling
  1. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  2. Once cooled, slice the bread and enjoy!

Notes

Store in the fridge for 5-7 days or freeze for longer storage. For easy snacking, slice before freezing.
