Preparation
- Preheat your oven to 300°F (149°C).
- Line an 8-inch square baking pan with parchment paper, leaving some overhang.
- In a large bowl, mix together pumpkin seeds, oat flour, and salt. Set aside.
- In a small saucepan, heat honey and coconut oil over medium heat until melted.
- Pour the honey mixture into your dry ingredients and mix well.
- Spread the mixture in the lined pan and press firmly with the back of a spoon.
Baking
- Bake for 24-26 minutes or until the edges are lightly golden brown.
- Let cool for about 10 minutes, then lift the bars out using the parchment.
- Cool completely (about an hour) before cutting into 10 bars.
Notes
Store in an airtight container at room temperature for up to a week. For longer storage, refrigerate or freeze.
