  • 2 cups raw pepitas Hulless pumpkin seeds
  • 2 tsp olive oil For coating the seeds
  • ¾ tsp sea salt or kosher salt Plus more to taste

Method
 

Preparation
  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
Mixing
  1. In a large mixing bowl, add the pepitas, olive oil, and salt. Optionally, add dried herbs or seasoning if desired. Mix well with a silicone spatula until the seeds are coated.
Baking
  1. Spread the pepitas out on the baking sheet in a single layer. Bake in the middle rack of the oven for about 10 minutes, stirring halfway through to ensure even roasting.
Cooling and Seasoning
  1. Remove the tray from the oven and let the pepitas cool for a few minutes. Taste them and add more salt or seasonings if desired.

Notes

Store roasted pepitas in an airtight container at room temperature for 1-2 weeks. For longer storage, refrigerate them. Keep an eye on them while roasting to prevent burning. Try different seasonings to customize the flavor!
