Preparation
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
Mixing
- In a large mixing bowl, add the pepitas, olive oil, and salt. Optionally, add dried herbs or seasoning if desired. Mix well with a silicone spatula until the seeds are coated.
Baking
- Spread the pepitas out on the baking sheet in a single layer. Bake in the middle rack of the oven for about 10 minutes, stirring halfway through to ensure even roasting.
Cooling and Seasoning
- Remove the tray from the oven and let the pepitas cool for a few minutes. Taste them and add more salt or seasonings if desired.
Notes
Store roasted pepitas in an airtight container at room temperature for 1-2 weeks. For longer storage, refrigerate them. Keep an eye on them while roasting to prevent burning. Try different seasonings to customize the flavor!
