Preparation
- Preheat the oven to 375°F (190°C).
- Rub the chicken all over with olive oil, salt, and pepper.
- Stuff the cavity with minced garlic, lemon slices, and chopped fresh herbs.
Cooking
- Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10 minutes before carving.
Notes
For a twist, add a spicy rub if you like some heat! Leftover chicken can be stored in the fridge for up to 3-4 days or frozen for up to 4 months. Reheat in the oven for best results.
