  • 1 oz raspberry syrup (store-bought or homemade)
  • 3/4 oz freshly squeezed lime juice
  • 1/2 oz simple syrup (optional, to taste)
  • 1 oz egg white (or 1 oz aquafaba for vegan option)
  • Ice (for shaking)
  • Fresh raspberries and lime wedges (for garnish)

Preparation
  1. Juice your lime, then measure out the tequila, passionfruit juice, raspberry syrup, and any optional simple syrup.
  2. If making raspberry syrup at home: simmer ½ cup raspberries, ½ cup sugar, and ½ cup water until thickened. Strain and cool.
Mixing
  1. In a cocktail shaker, combine tequila, passionfruit juice, raspberry syrup, lime juice, and egg white (or aquafaba).
  2. Shake vigorously without ice for 15-20 seconds to emulsify the egg white for frothiness.
  3. Add ice to the shaker and shake again for another 15-20 seconds to chill and dilute the drink for a smoother texture.
Serving
  1. Double-strain the cocktail into a chilled coupe or martini glass to ensure a silky finish.
  2. Top with fresh raspberries, a lime wedge, or grated lime zest for visual appeal.
