Ingredients
  

Crepe Batter
  • 1 cup all-purpose flour
  • 2 pieces eggs Use cold for better texture
  • 1.5 cups milk Use cold for better texture
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
Apple Filling
  • 2 pieces apples, peeled and sliced Fuji, Granny Smith, or Honeycrisp work beautifully
  • 1 tablespoon butter For sautéing apples
  • Cinnamon to taste
  • Maple syrup or powdered sugar for serving

Method
 

Preparation
  1. In a mixing bowl, whisk together flour, eggs, milk, sugar, and vanilla until smooth.
  2. Let the batter rest for a few minutes to enhance fluffiness.
Cooking Crepes
  1. Heat a non-stick skillet over medium heat and melt a little butter.
  2. Pour a ladle of batter into the skillet, swirling to cover the bottom evenly.
  3. Cook for 1-2 minutes until the edges lift and the bottom is lightly browned.
  4. Flip and cook for another minute. Repeat with the remaining batter.
Making Apple Filling
  1. In another skillet, sauté the sliced apples in butter, sprinkling with cinnamon until tender.
Serving
  1. Serve the crepes filled with the apple mixture and drizzle with maple syrup or dust with powdered sugar.
  2. Optionally, add a scoop of vanilla ice cream for a decadent touch.

Notes

These crepes keep for 2-3 days in the fridge in an airtight container. You can reheat them in a skillet or microwave. For make-ahead, freeze with layers separated by parchment paper for up to a month.
