  • 1 tablespoon maple syrup Optional for sweetness.
  • 1/2 teaspoon cinnamon Freshly ground is preferable.
  • 1/4 teaspoon nutmeg Use freshly grated for the best flavor.
  • 1/4 teaspoon vanilla extract Pure vanilla extract is best.
Optional Toppings
  • nuts Any variety, chopped or whole.
  • seeds Like chia or sunflower seeds.
  • granola For added crunch.

Preparation
  1. In a mixing bowl, combine the cottage cheese, pumpkin puree, maple syrup, cinnamon, nutmeg, and vanilla extract.
  2. Blend or whisk until smooth and creamy. The more blended, the creamier it gets!
  3. Serve in a bowl and sprinkle on your favorite toppings like nuts, seeds, or granola.

Notes

You can store leftovers in the fridge for up to 3 days. For an ultra-smooth texture, blend longer or add a splash of milk if too thick.
