  • 1 cup pumpkin puree Canned or fresh pumpkin puree can be used.
  • 2 large eggs For a vegan option, substitute with plant-based alternatives.
  • 1 cup milk Dairy or plant-based milk can be used.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg Feel free to add ginger or cloves for more spice.
  • 1 tablespoon butter For cooking.

Method
 

Preparation
  1. In a mixing bowl, combine the pumpkin puree, eggs, milk, vanilla extract, cinnamon, and nutmeg. Whisk until well combined.
  2. Heat a skillet or griddle over medium heat and add a little butter.
Cooking
  1. Dip each slice of bread into the pumpkin mixture, ensuring both sides are coated.
  2. Place the coated bread slices on the skillet. Cook for 3-4 minutes on each side, or until golden brown.
  3. Serve warm with maple syrup and whipped cream, if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can also freeze individual slices for up to 2 months. Reheat in the toaster for best results.
