- In a mixing bowl, combine the pumpkin puree, eggs, milk, vanilla extract, cinnamon, and nutmeg. Whisk until well combined.
- Heat a skillet or griddle over medium heat and add a little butter.
Cooking
- Dip each slice of bread into the pumpkin mixture, ensuring both sides are coated.
- Place the coated bread slices on the skillet. Cook for 3-4 minutes on each side, or until golden brown.
- Serve warm with maple syrup and whipped cream, if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. You can also freeze individual slices for up to 2 months. Reheat in the toaster for best results.
