Preparation
- Whisk together the pumpkin puree, milk, chia seeds, maple syrup, vanilla, spices, and salt in a large bowl.
- Taste to see if it needs more sweetness or spice. Adjust as desired.
- Let the mixture rest for 5 minutes, then whisk again to prevent clumping.
- Divide the mixture into 4 bowls or jars and chill them in the fridge for at least 4 hours, or overnight if possible.
Serving
- Before serving, stir the pudding and garnish with a sprinkle of cinnamon and pumpkin seeds.
- Serve chilled alongside fresh fruit and a cup of coffee.
Notes
Store any leftovers in an airtight container in the refrigerator for about 4-5 days. Stir before serving as it may settle.
