  • 1 cup canned pumpkin puree
  • 1.5 cups milk (dairy, almond, oat, or coconut) Any type of milk can be used.
  • 0.25 cup chia seeds
  • 0.25 cup maple syrup or honey Adjust sweetness to taste.
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.25 tsp ground nutmeg
  • 0.125 tsp ground cloves
  • 1 pinch salt
Optional Garnishes
  • Ground cinnamon (for sprinkling)
  • Pumpkin seeds
  • Whipped cream Optional for serving.
  • Nuts Optional for serving.

Method
 

Preparation
  1. Whisk together the pumpkin puree, milk, chia seeds, maple syrup, vanilla, spices, and salt in a large bowl.
  2. Taste to see if it needs more sweetness or spice. Adjust as desired.
  3. Let the mixture rest for 5 minutes, then whisk again to prevent clumping.
  4. Divide the mixture into 4 bowls or jars and chill them in the fridge for at least 4 hours, or overnight if possible.
Serving
  1. Before serving, stir the pudding and garnish with a sprinkle of cinnamon and pumpkin seeds.
  2. Serve chilled alongside fresh fruit and a cup of coffee.

Notes

Store any leftovers in an airtight container in the refrigerator for about 4-5 days. Stir before serving as it may settle.
