Preparation
- Preheat the oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.
- In a large mixing bowl, combine the yellow cake mix, crushed pineapple (with juice), eggs, and vegetable oil. Mix until well combined.
- Fold in the shredded coconut and chopped nuts, if using.
- Pour the batter into the prepared baking pan and smooth the top.
Baking
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Frosting
- While the cake is baking, prepare the frosting by mixing together the powdered sugar, softened butter, milk, and vanilla extract until smooth.
Serving
- Once the cake has cooled, spread the frosting over the top.
- Slice and enjoy your Pineapple Heaven Cake!
Notes
Store leftovers in the refrigerator for up to 5 days. Can freeze for up to 3 months. Thaw in the fridge overnight before serving.
