  • 1 box yellow cake mix
  • 1 can crushed pineapple (with juice)
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup shredded coconut (optional) Can be omitted for a simpler version.
  • 1 cup chopped walnuts or pecans (optional) Can use almonds or skip them altogether.
For the frosting
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter (softened) Use plant-based butter for a vegan option.
  • 1-2 tablespoons milk Adjust to desired consistency.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, combine the yellow cake mix, crushed pineapple (with juice), eggs, and vegetable oil. Mix until well combined.
  3. Fold in the shredded coconut and chopped nuts, if using.
  4. Pour the batter into the prepared baking pan and smooth the top.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Frosting
  1. While the cake is baking, prepare the frosting by mixing together the powdered sugar, softened butter, milk, and vanilla extract until smooth.
Serving
  1. Once the cake has cooled, spread the frosting over the top.
