  • 1 cup fresh raspberries You can substitute with blueberries or strawberries
Dry Ingredients
  • 1 cup sugar Split into two portions, use 1/2 cup for fruit mixture
  • 1 teaspoon cinnamon Enhances the peach flavor
  • 1 cup all-purpose flour Substitute with gluten-free blend if needed
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk Can use coconut milk for a vegan option
  • 1/2 cup butter, melted Use plant-based butter for vegan option
  • 1 teaspoon vanilla extract Can substitute with almond extract or omit

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, raspberries, 1/2 cup of sugar, and cinnamon; set aside.
  3. In another bowl, mix the flour, remaining sugar, baking powder, and salt.
Combining Ingredients
  1. Stir in the milk, melted butter, and vanilla extract into the dry ingredients until combined.
  2. Pour the batter into a greased baking dish and spoon the fruit mixture over the top.
Baking
  1. Bake for 45-50 minutes or until the top is golden brown.
Serving
  1. Serve warm with a scoop of vanilla ice cream.

Notes

Make sure to keep an eye on it toward the end to avoid burning. Store leftovers in the fridge for up to 3 days, or freeze for up to 3 months.
