  • 4 pieces boneless, skinless chicken breasts
  • 1 cup bread crumbs Use panko for extra crunch.
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour Or use almond/coconut flour for gluten-free.
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced To enhance flavor.
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. In one dish, mix breadcrumbs, half the Parmesan, and seasonings.
  3. In another bowl, beat together the eggs and milk.
  4. Put flour in a third dish.
  5. Dredge the chicken in flour, dip it in the egg mixture, then coat it with the breadcrumb mixture.
Cooking
  1. Cook the chicken in olive oil for 3-4 minutes per side until golden brown.
  2. Transfer the chicken to a baking dish.
  3. Mix remaining Parmesan with mozzarella and garlic, then spread on top of the chicken.
  4. Bake for 20-25 minutes until the chicken is fully cooked through.

Notes

Serve with a side of crispy roasted veggies or a refreshing salad. For storage, keep in the fridge for 3-4 days or freeze for up to 3 months. Reheat in the oven to maintain crispiness.
