Preparation
- Preheat your oven to 375°F.
- In one dish, mix breadcrumbs, half the Parmesan, and seasonings.
- In another bowl, beat together the eggs and milk.
- Put flour in a third dish.
- Dredge the chicken in flour, dip it in the egg mixture, then coat it with the breadcrumb mixture.
Cooking
- Cook the chicken in olive oil for 3-4 minutes per side until golden brown.
- Transfer the chicken to a baking dish.
- Mix remaining Parmesan with mozzarella and garlic, then spread on top of the chicken.
- Bake for 20-25 minutes until the chicken is fully cooked through.
Notes
Serve with a side of crispy roasted veggies or a refreshing salad. For storage, keep in the fridge for 3-4 days or freeze for up to 3 months. Reheat in the oven to maintain crispiness.
