  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 1 cup celery, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream Can swap for coconut milk for a dairy-free option.
  • Salt and pepper to taste
  • 2 tablespoons butter For sautéing.
  • Chopped chives or parsley for garnish

Method
 

Cooking
  1. In a large pot, melt the butter over medium heat. Add the onions and celery, cooking until softened.
  2. Stir in the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Using a potato masher or immersion blender, mash or puree the soup to your desired consistency.
  4. Stir in the heavy cream, and season with salt and pepper to taste.
  5. Garnish with chives or parsley before serving.

Notes

For extra flavor, sauté onions until slightly caramelized. Adjust seasoning as you go. Can add bacon bits or cheese before serving for texture.
