  • 2 units eggs
  • 0.25 cups maple syrup or honey
  • 1 tsp vanilla extract

  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.25 cups chopped walnuts or pecans (optional)

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, whisk together eggs, milk, maple syrup, and vanilla extract.
  3. Stir in oats, baking powder, cinnamon, and salt until well combined.
  4. Fold in the diced apples and nuts, if you’re feeling nutty.
  5. Pour the mixture into the greased baking dish, spreading it evenly.
  6. Bake for 30-35 minutes, or until the top is golden and the center is set.
  7. Let it cool for about 5 minutes before serving.

Notes

This breakfast bake can be refrigerated for about 5 days or frozen for up to 3 months. Top with extra maple syrup or yogurt when serving. Adjust sweetness as per your taste.
