Ingredients
  

For the Filling
  • 2 cups Diced jalapenos Use fresh for extra spice
  • 8 oz Cream cheese, softened Can substitute with plant-based cream cheese for vegan option
  • 1 cup Shredded cheddar cheese For a kick, consider pepper jack cheese
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
For Assembly
  • 12 pieces Egg roll wrappers Can substitute with spring roll wrappers

Method
 

Preparation
  1. In a bowl, mix the diced jalapenos, cream cheese, shredded cheddar cheese, garlic powder, and onion powder until well combined.
  2. Take an egg roll wrapper and place a spoonful of the filling in the center.
  3. Fold the wrapper over the filling, then roll it tightly; seal the edges with a little water.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
  3. Remove and drain on paper towels. Serve warm.

Notes

Let the mixture cool slightly before filling the wrappers to prevent soggy skins. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to a month. Reheat in the oven for best results.
