Casserole Ingredients
  • 4.5 cups chopped cooked chicken Use rotisserie chicken for convenience.
  • 4 oz cream cheese (room temperature) Ensure the cream cheese is softened for easy mixing.
  • 1 cup cottage cheese
  • 0.5 cup sour cream
  • 1 can (10.5 oz) Unsalted Cream of Chicken Soup
  • 0.25 tsp garlic powder
  • 0.25 tsp dried onion powder
Topping Ingredients
  • 1 sleeve Ritz crackers (crushed) This provides the signature crunch.
  • 5 Tbsp butter (melted) Melt before mixing with crackers.

Method
 

Preparation
  1. Preheat your oven to 350°F and lightly spray a 9x9-inch baking dish with cooking spray; set it aside.
  2. In a large bowl, combine the chopped cooked chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup.
  3. Spread the mixture into the prepared pan.
  4. In a separate bowl, mix the crushed Ritz crackers with melted butter, then sprinkle this topping over the chicken mixture.
Baking
  1. Bake uncovered for 30 to 40 minutes until bubbly and golden.

Notes

Leftovers keep well in the fridge for 3-4 days and can be frozen for up to 2 months. For best results, let it thaw in the fridge overnight before reheating.
