Salad Ingredients
  • 1 cup cooked lentils Use any variety of lentils.
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled Add just before serving.
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the cooked lentils, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Top with feta cheese and serve immediately, or refrigerate for later.

Notes

Let the salad chill in the fridge for at least 30 minutes before serving for the best flavor. This dish can be served with crusty bread and pairs well with grilled chicken or fish. Feta should be added last to maintain its texture.
