- Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add the chicken and cook until golden brown, about 6-7 minutes per side. Remove chicken and set aside.
- In the same skillet, add minced garlic and cook until fragrant.
- Add chicken broth, heavy cream, Italian seasoning, and sun-dried tomatoes. Bring to a simmer.
- Stir in Parmesan cheese until melted.
- Return the chicken to the skillet and let it simmer in the sauce for about 5-10 minutes, until cooked through.
- Garnish with fresh basil and serve with pasta or rice.
Notes
Don’t overcook the chicken to keep it juicy. You can substitute heavy cream with half-and-half for a lighter option. Consider adding crushed red pepper flakes for a hint of heat.
