Ingredients
  

For the Chicken
  • 4 pieces boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1/4 cup milk
  • 2 tablespoons olive oil for frying
For the Coating
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese divided
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In one dish, mix breadcrumbs, half the Parmesan, and the Italian seasoning.
  3. In a second dish, beat the eggs and milk until combined.
  4. Place the flour in a third dish.
Breading and Cooking
  1. Dredge the chicken: First in the flour, then the egg mixture, and finally the breadcrumb mixture.
  2. In a skillet, cook the breaded chicken in olive oil for 3-4 minutes on each side until golden brown.
Baking
  1. Transfer the chicken to a baking dish.
  2. In a bowl, mix the remaining Parmesan with mozzarella and minced garlic. Top the chicken with this cheesy mixture.
  3. Bake for 20-25 minutes until the chicken is cooked through and the cheese is bubbly.

Notes

Serve hot with a sprinkle of fresh herbs. Great paired with steamed veggies or crispy roasted potatoes. For leftovers, store in an airtight container for 3-4 days in the fridge.
