Preparation
- Preheat your oven to 375°F (190°C).
- In one dish, mix breadcrumbs, half the Parmesan, and the Italian seasoning.
- In a second dish, beat the eggs and milk until combined.
- Place the flour in a third dish.
Breading and Cooking
- Dredge the chicken: First in the flour, then the egg mixture, and finally the breadcrumb mixture.
- In a skillet, cook the breaded chicken in olive oil for 3-4 minutes on each side until golden brown.
Baking
- Transfer the chicken to a baking dish.
- In a bowl, mix the remaining Parmesan with mozzarella and minced garlic. Top the chicken with this cheesy mixture.
- Bake for 20-25 minutes until the chicken is cooked through and the cheese is bubbly.
Notes
Serve hot with a sprinkle of fresh herbs. Great paired with steamed veggies or crispy roasted potatoes. For leftovers, store in an airtight container for 3-4 days in the fridge.
