  • 4 pieces boneless, skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese divided
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. In one dish, mix breadcrumbs, half the Parmesan, and seasonings.
  3. Beat the eggs and milk together in another dish.
  4. Place the flour in a third dish.
Coating the Chicken
  1. Dredge each chicken breast in flour, dip in the egg mixture, and then coat with the breadcrumb mixture.
  2. Heat the olive oil in a pan and cook the chicken for 3-4 minutes per side until golden brown.
  3. Transfer the chicken to a baking dish.
Baking
  1. Mix the remaining Parmesan with mozzarella and garlic, then top the chicken with this cheesy blend.
  2. Bake for 20-25 minutes until cooked through.

Notes

For extra crispiness, bake on a wire rack. You can substitute different cheeses or adjust seasonings as desired.
