Ingredients
  

Egg Mixture
  • 8 large large eggs
  • ¼ cup milk
  • ½ tsp salt Adjust to taste
  • ½ tsp black pepper Adjust to taste
Flavor Add-ins
  • ¼ cup white onion (finely diced)
  • cup baby spinach (roughly chopped)
  • 4 strips bacon (cooked and crumbled)
  • 2 links cooked chicken sausage (chopped into tiny pieces)
  • ½ - ⅔ cup white or baby bella mushrooms (diced)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ cup bell pepper (any color, deseeded and chopped into small pieces)
  • ¼ - ⅓ cup shredded cheddar or mozzarella cheese Optional: sprinkle on top
  • ¼ cup buffalo sauce (optional)
  • ¼ cup chopped green onions
  • 1 cup cooked or rotisserie chicken (chopped into small pieces)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a regular muffin tin (12 wells).
  2. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper.
  3. Choose your flavor variation and stir in the respective ingredients.
  4. Divide the egg mixture evenly among the greased muffin cups.
  5. If desired, sprinkle extra cheese on top for that melty goodness!
Baking
  1. Bake for 14-18 minutes until puffed and set. They will deflate slightly once removed from the oven.
  2. Serve warm and enjoy your delicious creations!

Notes

Store leftovers in an airtight container in the fridge for about 4-5 days. These can also be frozen for up to 3 months. Reheat in the microwave for about 30 seconds before serving.
