  • 2 pounds beef stew meat
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Toast to enhance flavor
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup sour cream Can substitute with coconut cream for dairy-free option
  • to taste Salt and pepper
  • to taste Fresh parsley for garnish Optional

Method
 

Cooking
  1. In a slow cooker, add the beef stew meat, onion, garlic, and mushrooms.
  2. Pour the beef broth and Worcestershire sauce over the top.
  3. Season with salt and pepper to taste.
  4. Cover and cook on low for 6-8 hours until the beef is super tender.
  5. About 30 minutes before serving, stir in the sour cream.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

For thicker sauce, mix a bit of xanthan gum before serving. Can substitute beef with chicken or pork. For a plant-based option, use mushrooms or jackfruit as base.
