  • 1 pound Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper diced (pick your favorite color!)
  • 1 medium carrot, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup uncooked pasta (ditalini or small shells)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley or basil, for garnish (optional)

Cooking Steps
  1. In a large pot over medium heat, crumble and cook the Italian sausage until browned. Drain excess fat if desired.
  2. Add the diced onion, minced garlic, bell pepper, and carrot. Sauté for about 5 minutes until softened.
  3. Stir in the diced tomatoes and chicken broth, bringing the mixture to a simmer.
  4. Add the uncooked pasta and Italian seasoning, cooking for about 10 minutes, or until the pasta is al dente.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh herbs if desired and serve warm.

Notes

This soup keeps well in the fridge for about 3-4 days or can be frozen for up to 3 months. To reheat, simply microwave or heat on the stove, adding a splash of broth if necessary.
