Preparation
- Preheat your oven to 400°F. Line a sheet pan with parchment paper or give it a light spritz with nonstick spray.
- Arrange the sliced sausage, diced sweet potatoes, and broccoli florets in an even layer on the prepared sheet pan.
Make the Glaze
- In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
- Stir in honey, low-sodium soy sauce, apple cider vinegar, salt, and black pepper. Simmer for 2–3 minutes, stirring occasionally.
Bake
- Pour the honey garlic glaze evenly over the sausage, sweet potatoes, and broccoli. Toss everything until well-coated.
- Place in the oven and roast for 25–30 minutes, stirring once halfway through, until sweet potatoes are fork-tender and sausage is nicely browned.
- Remove from the oven and sprinkle with freshly minced parsley before serving.
Notes
For best results, cut sweet potatoes evenly for uniform cooking. You can swap the sausage for plant-based options for a vegan dish.
