  • 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 2 cups broccoli florets, cut into 1/2-inch pieces
Glaze Ingredients
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • to taste Salt

  • 2 tablespoons fresh parsley, finely minced

Method
 

Preparation
  1. Preheat your oven to 400°F. Line a sheet pan with parchment paper or give it a light spritz with nonstick spray.
  2. Arrange the sliced sausage, diced sweet potatoes, and broccoli florets in an even layer on the prepared sheet pan.
Make the Glaze
  1. In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Stir in honey, low-sodium soy sauce, apple cider vinegar, salt, and black pepper. Simmer for 2–3 minutes, stirring occasionally.
Bake
  1. Pour the honey garlic glaze evenly over the sausage, sweet potatoes, and broccoli. Toss everything until well-coated.
  2. Place in the oven and roast for 25–30 minutes, stirring once halfway through, until sweet potatoes are fork-tender and sausage is nicely browned.
  3. Remove from the oven and sprinkle with freshly minced parsley before serving.

Notes

For best results, cut sweet potatoes evenly for uniform cooking. You can swap the sausage for plant-based options for a vegan dish.
