  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 4 medium potatoes, sliced Thinly sliced for quicker cooking.
  • 1 can cream of mushroom soup Can substitute with cream of chicken or homemade white sauce.
  • 1 cup shredded cheese Cheddar or your choice; gouda or mozzarella could add a fun twist.
  • 1 medium onion, chopped
  • Salt and pepper to taste Adjust according to preference.
  • Optional: mixed vegetables (frozen or fresh) Broccoli and corn work great.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef and chopped onion over medium heat. Drain excess grease.
  3. In a large baking dish, layer sliced potatoes, the cooked ground beef mixture, and optional mixed vegetables.
  4. Pour the cream of mushroom soup over the layers and sprinkle with salt and pepper.
  5. Top with shredded cheese.
Baking
  1. Cover the dish with aluminum foil and bake for about 1 hour.
  2. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
Serving

Notes
