  • 2 1/2 cups all-purpose flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Hershey's Kisses, for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar together until fluffy.
  4. Beat in the egg, red food coloring, vanilla extract, and almond extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Roll the dough into balls and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes until slightly set.
  2. Immediately press a Hershey's Kiss into the center of each cookie after removing them from the oven.
  3. Allow to cool before serving.

Notes

Don't skip the parchment paper—it makes clean-up a breeze. Use an ice cream scoop for evenly-sized dough balls. Adjust sweetness by playing with the sugar ratio, and add chopped nuts for crunch if desired.
