Preparation
  1. Peel and grate the sweet potatoes and onion.
  2. Place them in a clean kitchen towel and squeeze out the excess moisture.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the sweet potato and onion mixture to the skillet.
  3. Press down into an even layer and cook until the bottom is crispy, about 5-7 minutes.
  4. Flip and cook for another 5-7 minutes, adding salt, pepper, and any optional spices.
  5. Serve hot and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or toaster for best results. You can also freeze them for up to a month.
