  • 1 cup rolled oats
  • 1 ripe banana
  • 1 cup applesauce
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. In a blender or food processor, combine the oats, banana, applesauce, eggs, baking powder, cinnamon, vanilla, and a pinch of salt.
  2. Blend until smooth.
Cooking
  1. Heat a non-stick skillet over medium heat and lightly grease it.
  2. Pour 1/4 cup of batter onto the skillet for each pancake.
  3. Cook for 2-3 minutes on each side or until golden brown.
Serving
  1. Serve warm, topped with fresh fruit or a drizzle of maple syrup.

Notes

For variation, you can add a tablespoon of peanut butter for extra flavor or substitute eggs with flaxseed meal for a vegan option. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
