Ingredients
  

Dry Ingredients
  • 2 cups rolled oats Use old-fashioned oats for the best texture.
  • 1 tsp baking powder
  • 1 tsp ground cinnamon Can add nutmeg for extra spice.
  • 1/2 tsp salt
Wet Ingredients
  • 1 1/2 cups apples, peeled and chopped Ripe apples are recommended for sweetness.
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup Substitutable with each other.
  • 1/4 cup coconut oil, melted
  • 2 each eggs Can be substituted with flax eggs for vegan version.
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
  3. In another bowl, combine the apples, applesauce, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract.
Combining
  1. Pour the wet ingredients into the dry ingredients and mix until combined.
  2. Fold in the chopped apples.
Baking
  1. Pour the mixture into the prepared cake pan and spread evenly.
  2. Bake for 25-30 minutes or until a toothpick comes out clean.
  3. Allow to cool before slicing and serving.

Notes

Keep an eye on the cake while baking to prevent it from becoming dry. Serve warm with Greek yogurt or drizzle with more honey or syrup. Store in the fridge for 3-4 days or freeze for up to 3 months.
