  • 1/4 cup honey or maple syrup Optional for sweetness

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, dried fruits, nuts, and seeds.
  3. If using, add honey or maple syrup, vanilla extract, and a pinch of salt. Mix until well combined.
  4. Scoop tablespoon-sized amounts of the mixture onto the prepared baking sheet, flattening them slightly.
Baking
  1. Bake for 15-20 minutes or until the edges are golden.
  2. Allow cookies to cool completely before transferring to an airtight container.

Notes

These cookies can be crumbled over yogurt, paired with tea or coffee, and stored in an airtight container. They last up to a week at room temperature, two weeks in the fridge, or three months in the freezer.
