  • 1/2 cup rolled oats Make sure they are gluten-free if necessary.
Wet Ingredients
  • 1/4 cup nut butter (e.g., almond butter, peanut butter) Any nut butter of choice.
  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract For flavor enhancement.
Spices
  • 1/2 teaspoon cinnamon Add warmth and flavor.
  • 1/4 teaspoon salt Balances the sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the mixed nuts, seeds, and oats.
  3. In another bowl, mix the nut butter, honey (or maple syrup), vanilla extract, cinnamon, and salt until well combined.
  4. Pour the wet mixture into the dry mixture and stir until everything is evenly coated.
Baking
  1. Scoop tablespoon-sized amounts of the mixture onto the prepared baking sheet, flattening them slightly.
  2. Bake for 10-12 minutes or until golden brown.
  3. Allow the cookies to cool completely before storing them in an airtight container.
