  • 1 cup lentils, cooked and drained
  • 1/2 cup water
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon dried herbs (such as thyme or oregano)
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a blender or food processor, combine the cooked lentils, water, olive oil, minced garlic, salt, baking powder, dried herbs, and black pepper.
  3. Blend until you’ve got a smooth mixture.
  4. Pour the mixture into the prepared loaf pan and smooth the top.
  5. Bake for 35-40 minutes or until the top is golden brown and a toothpick comes out clean.
Cooling
  1. Allow it to cool before slicing it up to enjoy!

Notes

Serve slices warm with butter or olive oil. It can be stored in the fridge for 5-7 days or frozen for up to 3 months. Let it cool completely before storing to prevent sogginess.
